I have been long searching for an easy, healthy recipe to satisfy the sweet craving we get sometimes after dinner. After searching around the internet I have created the best healthy white chocolate recipe you will ever taste minus the bad fats and sugars. It really is the easiest, tastiest and healthiest white chocolate recipe you will ever see.
The base of it is simple, shredded coconut. Do yourself a favour and pick up some at a market (Ramsgate food market every Saturday is my weekly ritual). The add ones are limited only by your imagination. Sweetened only by organic pure maple syrup and a tiny pinch of sea salt to add depth. I added pistachios to mine last week which was amazing but dried organic cranberries as well would have been great too. Any whole nut or dried fruit would work, say apricot and almond or macadamia and dried blueberries. Each time I make this I add a different combination of foods. Do your self a favour and give this recipe a go today.
3 cups of shredded dried coconut
1/4 cup organic pure maple syrup
small pinch sea salt
add ons: pistachios, dried cranberries, almonds, apricots, whatever you like!
Place the coconut in the ladyship and press auto button. Each time the machine pauses tap the side of it to release the coconut from the side of the machine. Blend coconut until it starts to become clumpy or moist (resist the urge to add other ingredients yet until this occurs). You will need to blend it three times on auto (three minutes in total) so it is moist enough to add the other ingredients.
Pour out the coconut into a big bowl and stir in the maple and salt until it is a thick consistency. Once this is done then add your add ins and stir again. Grease a glass tray or baking dish then press the mixture into the bottom of it. Place glass tray in freezer and freeze for at least 30 minutes until it is cold to touch. Flip out and cut into squares. Keep coconut chocolate frozen and take out of freezer to enjoy.
