I was racking my brain the other day trying to think of a tasty, relatively healthy snack for the whole family. On the weekend when you are looking for something a little naughty but aren’t keen to completely break the calorie bank why not try this! I saw a post on caramel popcorn the other day so I decided to reinvent it with a healthy twist. My version cinnamon protein popcorn. So totally easy to make and the whole family will love it!
1/2 cup unpopped popcorn kernels
1/3 cup coconut oil
1/4 cup 100% maple syrup
1 tbsp. cinnamon protein powder (you can substitute any flavour you like, vanilla or chocolate would work too)
1 tsp. grapeseed oil
Heat oil in a non stick frypan on a medium heat, add the corn kernels and cover with a lid. Leave on medium heat as any higher the corn will burn. Wait until most of the corn has popped and take it off the heat. While heating in a separate small saucepan heat the coconut oil and maple syrup so it turns to a liquid. Take off the heat let it cool slightly and then add the protein powder to it. It will fizz a little but that is fine. Add the mixture to the popped corn and stir with a spatula to coat all the kernels. Pour out into a bowl and enjoy!
