Doing a little experimenting with the Ladyship this morning, I came up with a delicious smoothie variation on the Lemon Zinger as described in my previous post here.

I wanted to boost my vegetable intake after training this morning and really felt like a smoothie but nothing too sweet and filling. I love the taste of limes and pineapple and they go so well together I decided to make my smoothie variation on a lemon zinger. Spinach is so great for you it is rich in iron and folate.Delicious Lime Zinger

Lime Zinger Smoothie

1 x whole lime

150mls cold filtered water

1/4 cup frozen pineapple

water and 1/2 flesh of a young coconut (you can use packaged coconut water if you are in a hurry and omit the flesh and it will taste pretty similar)

2 big handfuls baby spinach leaves

cup of ice

Place the number 1 filter in the Ladyship and fill the jar with the lime cut into quarters and the filtered water. Blend for 30 seconds then open the tap on the side to dispense the liquid without the pulp. Nothing worse than a pulpy smoothie! Empty and rinse out the jar and place the lime extract back in the jar. Make sure you close the tap before you do this, I don’t know how much liquid I have lost out of my Ladyship from leaving it open! Add the coconut water, flesh, pineapple, spinach and ice and blend for 1-2 minutes. I like to blend this one for a long time as it makes it so lovely and frothy. The Ladyship is fantastic at doing this.

Pour into two large glasses and enjoy! It is a lovely tart but slightly sweet smoothie that is so refreshing. The spinach is tasteless so don’t be afraid to add the amount indicated in the recipe as I assure you you will not taste it.
