Healthy Banana Nut Muffins PALEO !!!

Paleo Banana Nut MuffinFeel like a treat that won’t break the calorie bank? Look no further than here. This recipe makes 12 extra large healthy delicious muffins (or 24 mini muffins) that will satisfy even the toughest critic. Easy to make and ready in half an hour.

Ingredients

2 cups almond meal

1/3 cup coconut flour

1 cup crushed walnuts

1 tsp. baking soda

1/4 tsp. sea salt flakes

1 tsp. cinnamon

1/2 tsp. nutmeg

 

3 ripe bananas

1 tbsp. vanilla

3 eggs

1/3 cup honey

50 gms coconut oil

25 gms almond butter

 

Preheat oven  to 175 degrees.

Mash bananas in a bowl and add honey, almond butter, eggs, oil and vanilla and mix well.

In a separate bowl mix all dry ingredients then add wet ingredients to dry and mix slowly (do not overbeat mix).

Spoon into pregreased 12 hole muffin tin.

Bake for 15-20 minutes. Cool slightly in tray before turning out.
